10 Autumn Foods to Fight Fat Before Winter Days

1. Fresh Seasonal Fruit: Apples, oranges and berries (yes, strawberries are still available). Research shows that diets high in fiber help keep you full. Low-fat, fiber-rich fruit also promotes regularity. The result: A flatter tummy. Try a decadent and healthful warm cobbler teamed with a scoop of calcium-rich all-natural vanilla yogurt with autumn fresh fruit, and drizzle sweet balsamic vinegar on top.
2. Potassium-Rich Foods: Bananas, dried apricots and cranberries are high in potassium and used in baking during fall. They act as natural diuretics, which may reduce bloating. These are good plain or put into all-natural healthful nut breads and muffins that you make and bake.
3. Cheese: Don't skip good cheese because it's a good source of calcium and other nutrients such as protein and vitamin A--and it's creamy and tasty in veggie pastas and hot, toasty sandwiches. The crunchy texture is great in a fall salad or nutrient-dense good for you chewy cookie without chemicals and preservatives and chock-full of those dried fruits.
6. Chocolate: Not just a fall holiday food--it's a year-round health food. Dark Chocolate Sea Salt Cashews, for instance, boast fiber, and iron. Tomatoes: These little wonders--hot or cold-are rich in the antioxidant lycopene--a cancer fighter and wonder for hot and filling whole grain rice dishes for dinner to healthy omeletes for breakfast. One cup of chopped tomatos has just 35 calories. Because of this, tomatoes are a fat-free, nutrient-rich, and and versatile fall filler in many hearty meals.
10. Pumpkin: The alpha carotene in pumpkin (like sweet potatoes), a fall favorite, makes this vegetable a nutritional bonanza. Pumpkin is rich in heart-healthy carotenoids, potassium, magnesium, and folate, all of which may protect you from heart disease. This comfort food has only 25 calories per half cup and no fat. During the cold season, a warming and healthful dessert is a slice of pumpkin pie teamed with a steaming cup of hot water spiked with a tablespoon or two of apple cider vinegar and soothing chamomile tea.

Autumn Special 2.99 at Kobo for The Healing Powers of Superfoods

Welcome to a Buddha bowl, a perfect wintertime salad choice for Super Bowl Sunday, right? It is a vegetarian meal served on a bowl, which boasts an arrangement of superfoods, including ancient grains like cooked brown rice, beans, and hot fresh vegetables. All these farm-to-table foods are arranged in a nice Zen-like balance and in a creative manner to be easy on the eyes. It’s been around for several years at health spa resorts to pre-packaged at your favorite local grocery store to even hotel menus.

These are actually salads with whole foods, including vegetables and whole grains. You can add protein, whether it be poultry, fish, or even meat. It’s a complete meal in a bowl. The bowls are in style because they can be super fresh, super flavorful, and super convenient. If you’re hungry and want to eat fresh and healthy, you’ve come to the right place!
One Super Bowl day a few years ago, I prepared a multitude of dishes that are fun but take time, such as casseroles to hearty soups. While a small group of folks at my cabin were relaxing and watching the game, I, the workhorse, was in the kitchen cooking, baking, and thinking of one five letter word, “Chill.”  But I made a super vow. Next time whatever I put together when visitors visit, the food will be healthful, fast and easy. So, this recipe is inspired by Super Bowl Day.
BUDDHA BOWL
Salad
2-2 ½ cups kale mix, chopped
1 cup cruciferous vegetables, steamed or nuked

1/2 cup tofu, grilled
½ cup avocado, slices
½ cup tomatoes, slices
1/ 2 cup feta or cheddar cheese
1 cup brown rice, cooked

1/4 cup sunflower seeds, shelled (optional)
Parmesan cheese shavings (optional)
Dressing: You can make your own olive oil and balsamic vinegar or rice vinegar dressing; ratio 3 oil to 1 vinegar and add your favorite spices and herbs. Or you can also purchase a premium all-natural store bought variety, including chunky blue cheese, herbal, thousand island, or ranch dressing--or all of them!
Buddah Bowl and Yoga, Anyone?
In a bowl, place each ingredient separately in individual groups. Arrange each food item nicely for a nice presentation. Garnish with Parm cheese.  Serve with French bread. Slice, spread with butter and garlic powder Pop in the oven under the broiler until lightly toasted. Sprinkle with fresh parsley. Serves 2-3. 
You can double the recipe if you like. *You can prepare these for ready-to-eat bowls. Or if you want to have more fun, put ingredients in ramekins and let people put together their own power bowls. Either way, it works! And you just may find the time to slip into a Zen-like zone and enjoy inner balance.

Halloween is for Superfoods--Farm-to-Table Treats


During one October week before Halloween I was on a mission.  A trip to many stores around town was on my to-do list.  I bought pumpkin ice cream, pumpkin muffins, pumpkin cookies, and chocolate candy bars (big and small)—the big day was coming!

On the afternoon of Halloween, I put a brighter bulb in the porch light, dumped all the candy into a plastic pumpkin, placed the muffins and cookies with spiders on a platter, and brewed a cup of coffee. It was Halloween night and I was super ready for trick or treaters. At dusk nobody came. When it was dark not one knock on the door. By 9:00 P.M., it was obvious. I was so tricked—no kids in spooky costumes for me. I blamed it on the chilly weather.

So, this year I am on a pumpkin fast. Well, I have canned pumpkin in the pantry, and I munched on pumpkin seeds last week. I did experience the pumpkin patch in Placerville in early October. But this time around, on Halloween night I’m starting a new tradition. All lights off. I’ll be watching Hallmark harvest films and/or scary sci-fi films for the chill effect, working on a book project, cuddling with the dog and cat—and  chilling. No goblins or witches—just a sweet treat—a cranberry shake.  

Autumn Cranberry Shake

1-1/4 cups vanilla gelato
½-3/4 cup fresh cranberries, whole
¼ cup all natural premium orange juice
½ small banana, slices
¼ cup organic half-and-half
1 capful pure vanilla extract
Honey to taste
4-5 small ice cubes
Whipped cream (optional)
Walnuts, finely chopped (garnish for topping)
In a blender combine gelato, berries, juice, half-and-half, vanilla, honey, and ice cubes. Blend quickly until thick and smooth.  Top with whipped cream and nuts. Pour into a milkshake glass. Grab a spoon and straw. Serves 1 or 2.
 
I didn’t want to spook you with exotic fruits, protein powder, or non-fat milk. After all, we are entering the holiday season. In defense of this decadent shake, you are getting plenty of vitamin C from the berries and orange juice. Also, this shake boasts calcium and protein. So you don’t have to feel guilty when savoring this cold, oh-so creamy delight. Give credit to the banana and gelato, less milk. The cool thing is, fresh cranberries are delicious when you include nature’s sweeteners, like orange juice and honey. You’ll feel festive sipping this shake day or night—whether trick or treaters pay you a visit. Or not. Enjoy the chill of the shake. For tradition’s sake, Boo!

Memories of French Pumpkins and Other Sweet Treats



Warm Up to a Pumpkin Treat (or Two) 

One autumn on a trip away from the South Shore, I experienced pumpkins lining the cobblestone sidewalks in French-speaking Quebec City, Quebec. A pretty pumpkin patch in the Apple Hill area of Placerville greeted me another Indian summer. And, I’ve enjoyed admiring pumpkins, all sizes, at our local grocery stores.
Last year I bought a huge pumpkin at our friendly Safeway. It was my intention to carve it, put a candle inside, and enjoy it on the deck. Well, the pumpkin did sit on the deck for a while. But it was faceless. Then, I brought it in and placed it by the fireplace. No happy or sad face. Time passed and the pumpkin without an identity ended up sitting on the dining room table amid orange and white candles. Finally, I put the orange ball without a personality (like Wilson in the film Castaway) on top of the fridge. I was going to repurpose it, by removing the seeds for homemade pumpkin seeds.
But days passed and then weeks and the poor pumpkin sat solo. One day I noticed an odor. It was the pumpkin that never was celebrated. Sadly, it was tossed in the garbage like a Christmas tree after the holiday season.  
So, this year cans of pumpkin puree sit in my pantry. Instead of a pumpkin pie, scones, or fudge, I’m warming up to making Pumpkin French Toast. It’s a fine treat that will get eaten and no waste, right?

Pumpkin French Toast

1 teaspoon European style butter
2 eggs, large, brown
½ cup low-fat organic milk
¼ cup pumpkin puree
½ teaspoon vanilla extract
1/2 teaspoon pumpkin spice
½ teaspoon cinnamon
4 slices French bread (thicker, the better)
Honey (local from Carson City or Reno)
Butter, extra for topping

In a large frying pan over medium heat, melt butter. Set aside. In a bowl, combine eggs, milk, pumpkin, vanilla, and spices. Mix well. Dunk bread slices (both sides) into the egg mixture. Place each slice into the pan. Medium heat is recommended. Cook for a few minutes and turn over. Repeat till golden brown. Serve hot. Add a pat of butter, drizzle with honey. Serves 2.

This recipe is easy to put together. Not only is it quick it’s versatile. It is good for breakfast, especially paired with chunks of seasonal fruit, and a cup of hot pumpkin spice flavored coffee or tea. But it can suffice as a late-night snack, too. The pumpkin touch is fall-ish. The best part: It won’t be tricked, like the South Shore pumpkin that came to my cabin and never lived a full life.

In the first paragraph, I, the one who wrote the bible on coffee, am mentioned.  ...Cal Orey, author of The Healing Powers of Coffee, says she's heard many stories like Susie's.
